Chicken Dinner Mondays-BBQ Ranch Chicken Sandwiches

I happened to make this while camping. 
A delicious grilled chicken sandwich with bbq sauce, bacon, cheddar cheese, and onion rings. 
Yes, I made onion rings while in the woods!
Hubby was very happy. 
So, if I can do this easily while camping, it can be done even easier while at home. 
Regardless of whether you are home, or camping, this  will cure any craving for a big, juicy chicken sandwich that is full of flavor. 


Mom's Bags of Tricks' BBQ Ranch Chicken Sandwiches
Serves 4 

Onion Rings 

1 cup flour 
1 tsp baking powder 
salt, pepper, seasonings to taste 
1 egg 
1/4 cup ranch dressing 
2 tbsp milk 
1 cup panko bread crumbs 
1 onion, cut into 1/4 inch rings, patted dry 
oil for frying 


Place flour, baking powder, salt, pepper, and seasonings in a ziplock gallon bag and mix well. 
In a bowl, mix egg, ranch and milk. 
In a second ziplock, place panko bread crumbs. 
Dip onions first in flour mixture, then in egg mixture, then in panko. 
Fry 3-4 minutes on each side. 
Drain on paper towels. 

I fried these in a pan with only 1/2 inch of oil to be safe while in the woods. At home, I would normally use more oil for a deep fry but this way works just as well. 
Because I am cooking for picky eaters, I held back on the sauce on one breast, allowing me to serve my whole family dinner, with some small adjustments. 

Chicken Sandwiches 

2 boneless, skinless chicken breasts, split 
4 slices thick cut bacon, cooked (I cooked it at home and reheated it on the grill) 
salt, pepper, seasonings
1/2 cup bbq sauce, divided  
2 tablespoons ranch 
4 slices cheddar cheese 
4 Pub style buns 


Split chicken in half lengthwise, place in gallon size ziplock bag. Add salt, pepper, and seasonings. 
Preheat and oil grill. 
Place chicken on grill and cook 5 minutes with the lid on. 
Flip chicken over, brush with BBQ sauce and cook another 5 minutes with the lid on. 
Flip chicken and rotate half  a turn and brush with BBQ sauce again. This cooks the chicken evenly while providing nice crossed grill marks. 
Add bacon to the grill to heat up if necessary. Mine was already cooked so it only needed a few minutes to heat up. 
Flip chicken once more and turn once again half a turn for crossed grill marks on the other side. 
Brush again with BBQ sauce and add cheese. 
Cook 2 minutes with the lid on to melt cheese and add buns to the grill so they are warm and toasty for serving. 


I added all but 2 tbsp of the bbq sauce to a cup for basting on the grill. To the 2 tbsp of BBQ sauce, I added 2 tbsp ranch dressing and spread on the bottom buns. 


Then, I built this amazing chicken sandwich by adding the bacon, a large onion ring, and drizzled with both BBQ sauce, and BBQ ranch and served with the extra onion rings on the side.

awesome enough to impress just about everyone!
